Better late than never!

My last post was a couple weeks after King was born and 5 minutes later I had Henry so I totally forgot about this whole blog thing. Almost 3 years later now that they are both in school a few mornings a week I may actually have time to do this...
I will post funny things my kids do, maybe some laughs at my hubby's expense, the occasional recipe and other fun craft ideas.
Shane (the hubs) was out of town this weekend and after he left I sent this text out to a few girlfriends. They got a good laugh so I figured it is worth sharing.
"When Shane leaves town he throws a toothbrush and swim trunks in his pocket, kisses my check and hits the road. When I leave town I pack for my self and both kids. Prepare food and snacks for them so they won't eat pizza and goldfish the whole time I'm gone. Take them to grandparents with extra sunblock, bug spray, a babysitter scheduled every other day, and neighbors and friends all on call. Email copies of the "shane can't marry a bimbo" addendum to my will and kids medical release forms to everyone I know. And remind my vegetarian sister that if I die and she raises my kids that she has to learn to cook meat."
This is actually all TRUE.

This morning I made some easy freezable breakfast bites that can be microwaved and thrown at your kids in the car on days you a running late. Easy and good!
Pancake Balls (named by King)
-Make enough pancake batter for 6-8 pancakes (I made homemade whole wheat buttermilk but have used a buttermilk mix also)
-12 Lil Smokies beef sausages (cut in halves) or 6 breakfast sausage patties (cut in fourths)
-Syrup
Spray mini muffin tin with Pam (or olive oil and water mixture). Put one piece of sausage in each cup then fill 2/3 full. Cook at 350 for 10-12 minutes. The tops will not brown! Take out of oven poke a couple holes in each with a toothpick and put one dollop of syrup on, spread and let soak in. I freeze them in bags of four for breakfast.
Mini Eggies (also King)
-5 eggs
-1/2 cup shredded cheese
-5 or 6 slices of deli ham (finely chopped)
-small can chopped green chilies (if your kids like them)
-salt and pepper
Spray mini muffin pan. Divide up the ham and put in each cup. Then divide cheese up and put in. I only use 1/2 the can of chilies. Crack eggs in a bowl and beat with fork, add salt and pepper. Using a TBS measuring spoon put one TBS of egg in each cup. Cook 350 for 8 minutes. They will puff up then deflate when they cool. I freeze these in bags of 6 because I'll eat them too!
